Warm brussel sprout salad with apple juice and Dijon mustard

Note
In German-speaking countries, brussel sprouts are known as rose cabbage and, due to the many vitamins they contain, they are also now known as “power cabbage”. This method of preparation enables this otherwise not so well liked winter vegetable to go in a completely different taste direction.
Ingredients
- »600 g Brussel sprouts wash, trim and cut in half lengthwise
- »2 tbsp sunflower oil
- »20 g butter
- »1 shallots peel and chop
- »1 garlic cloves Crush or chop
- »1 1/2 dl apple juice
- »2 tbsp dijon mustard
- » Sea salt and black pepper Freshly ground
- »1/2 dl (white) balsamic vinegar
- »1 apples as garnish wash, halve, remove core with apple corer. Cut the halves into quarters lengthwise, then cut into slices
- »2 tbsp pumpkin seeds as garnish dry roast lightly in a frying pan
Instructions
1. Heat sunflower oil and butter on heat setting 2/3.
2. Add the brussel sprouts and fry for 3-4 minutes.
3. As soon as the sprouts start to brown, add the shallots together with the garlic and fry together for one minute.
4. Douse with apple juice, Dijon mustard and vinegar, season with salt and pepper, then mix together well.
5. Close the lid and cook under pressure on setting 2 for 2 minutes.
6. As soon as the desired pressure level has been reached, start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android
7. At the end of the cooking time cool the rim of the cooker under cold running water until the pressure indicator stem remains in its lowest position.
Serving
Place the brussel sprouts into a bowl together with the sauce, add the pieces of apple together with the pumpkin seeds and season to taste with salt and pepper. Serve warm.
Hint: For those who like things hotter: after cooking some wasabi or horse radish can be added.
