Ingredients
- »800 g veal stew have the butcher cut it into 3 cm / 1.2 inches large pieces
- »2 tbsp flour
- »2 tbsp clarified butter
- »2 shallots peel and chop
- »1 garlic cloves peel and squeeze
- »20 g dried morels Soak in cold water for approx. 30 minutes. Then cut in half lengthwise, wash well and squeeze out.
- »2 dl white wine
- »1/2 dl Cognac
- »1 dl cream
- »2 dl meat stock
- »1/4 tsp hot paprika
- »2 tbsp maizena express, brown
- » Salt and pepper Freshly ground
- »1 bunch chives wash and chop finely
Instructions
1. Dust the veal ragout with flour.
2. Heat the clarified butter on heat setting 3/4.
3. Sear the meat.
4. Place on a plate and season with salt and pepper.
5. Then lightly fry the shallots, morels and garlic on a gentle heat for 2 minutes.
6. Douse with the white wine and reduce by half.
7. Add stock and Cognac, season with hot paprika, salt and pepper.
8. Then add the meat.

10. To prevent the dish from burning, stir occasionally.
Serving
Open the DUROTHERM® / HOTPAN® lid and place the pan back onto the cooking zone.
Add the cream, bring to simmering point, bind with maizena express and season to taste with salt and pepper.
Sprinkle with the chives before serving.
Enjoy with rice, pasta or mashed potatoes.
