Steamed trout fillets
with sake-miso sauce

  • 8 trout fillets
  • 1 tsp sunflower oil
  • 1 dl sake
  • 2 dl water
  • 1 tsp sugar
  • 1 tbsp soya sauce
  • 3 tbsp light miso paste
  • 1 tsp unseasoned rice vinegar
  • Sea salt and black pepper Freshly ground
  • 20 g ginger peel off the skin with a paring knife, then cut into very fine strips

Preparations

1. Season the trout fillets with sea salt; starting from the thinner end, form into a roll and secure with a toothpick.

2. Grease the steamer insert with sunflower oil and place the trout rolls inside.

Instructions

1. Put the water and sake into the DUROTHERM® / HOTPAN®.

2. Place the steamer insert with the fillets inside.

3. Put on the lid and start the cooking assistant of the app. The app can be installed free of charge in the corresponding store for iOS and Android

4. At the end of the cooking time, take the steamer insert out and place on a flat plate.

5. Place the pan back on the cooking zone without the lid, add the sugar and soy sauce, reduce on high power level for 3 minutes.

6. Add the miso paste, stir in well with the whisk, then add the rice vinegar.

7. Remove the toothpicks from the trout rolls, place in the miso sauce and, covered, warm on low heat for 5 minutes.

Serving

Arrange on a plate, pour over sake-miso sauce and sprinkle with finely sliced ginger. Serve basmati or saffron rice.

The dish remains warm in the DUROTHERM® / HOTPAN® for quite a long time.

4. Reduce the heat and allow to simmer for 2 minutes.

5. Start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android

6. Then place the DUROTHERM® / HOTPAN® onto the base / into the insulating bowl and soft cook for 8 minutes.

7. At the end of the cooking time, take the steamer insert out and place on a flat plate.

8. Place the pan back on the cooking zone without the lid, add the sugar and soy sauce, reduce on high power level for 3 minutes.

9. Add the miso paste, stir in well with the whisk, then add the rice vinegar.

10. Remove the toothpicks from the trout rolls, place in the miso sauce and, covered, warm on low heat for 5 minutes.

Serving
