  • 70 g plain white flour
  • 2 tbsp butter
  • 1 onions chop
  • 1 dl red wine
  • 1 l instant beef stock or vegetable stock cold
  • Sea salt and black pepper Freshly ground
  • Grated Gruyère cheese as garnish

Preparations

1. Roast the flour in the non-coated frying pan without fat on 2/3 heat equally chestnut brown. It is best to use a whisk for stirring. Let it cool down a little bit and reserve.

Instructions

1. Heat the butter in the DUROMATIC® and slowly brown the onions, then add the browned flour and douse with red wine.

2. Stir well with the whisk so that there are no lumps.

3. Pour on the cold bouillon and stir with the whisk until the soup starts to simmer.

4. Close the lid and cook under pressure on setting 2 for 15 minutes.

5. As soon as the desired pressure level has been reached, start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android

6. At the end of the cooking time, cool the rim of the cooker under cold running water until the pressure indicator stem remains in its lowest position.

Serving

Season to taste with salt and pepper and serve in soup plates. Sprinkle with grated cheese.
