carrot ginger soup with coconut milk

- »2 tbsp sunflower oil
- »1 shallots chop
- »3 carrots peel and cut in cubes
- »1 garlic cloves Crush
- »2 cm ginger Fresh peel and grate
- »5 dl coconut milk
- »5 dl instant chicken stock
- »1 red chilli peppers wash, core and cut into small pieces
- »1/2 bunch Thai basil cut into strips
- » Sea salt and black pepper Freshly ground
Instructions
1. Lightly cook the shallots, carrots and garlic in sunflower oil.
2. Rub the ginger onto it, douse with coconut milk and chicken stock.
3. Close the lid and cook under pressure on setting 2 for 5 minutes.
4. As soon as the desired pressure level has been reached, start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android
5. At the end of the cooking time, cool the rim of the cooker under cold running water until the pressure indicator stem remains in its lowest position.
6. Purée the soup with the stick blender.
Serving
If you like it hot then add the chillis straightaway and mix, otherwise serve them separately.
Finally, add the Thai basil.
Hint: With fried giant prawns on skewers as a side dish, this is a delicious, spicy snack for apéritif.
