Ingredients

  • 400 g spaghetti thick n° 7
  • 2 tbsp olive oil
  • 2 garlic cloves peel and squeeze
  • 2 tbsp tomato purée
  • 1 l instant vegetable stock
  • 300 g Chopped tinned tomatoes or passata
  • 1 dl crème fraîche
  • 1/2 bunch leaf parsley wash, shake dry, pluck off the leaves and cut into strips
  • 150 g grated parmesan cheese
  • Sea salt and black pepper Freshly ground

Instructions

1. Heat the olive oil in the DUROTHERM® / HOTPAN® on medium heat.

2. Lightly cook the garlic with the tomato purée for 1 minute.

3. Add the vegetable stock and passata, put the lid on and bring to the boil on the highest setting.

4. As soon as steam rises from between the lid and the edge of the pan, open the lid, break the spaghetti into two over the pan and place into the sauce. (This way of cooking spaghetti may well break the heart of any Italian, this is why we call it broken heart spaghetti)

5. Reduce the heat setting to 1/2 and allow the spaghetti to simmer lightly for 5 minutes. It should be stirred from time to time so that it does not stick together.

6. Then place the lid on, place the DUROTHERM®/HOTPAN® onto the base/into the insulating bowl and softcook for 10 minutes.

7. Start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android

Serving

When the cooking time is at an end, remove the lid, loosen up the spaghetti with a wooden spoon, add the crème fraîche as well as the chopped parsley, and season to taste with salt and pepper.

Serve the parmesan separately.

Hint Make sure that you stick exactly to the quantities for both spaghetti and liquid.
