Baba ghanoush is an Arabian dish consisting of mashed aubergines. Instead of baking them in the oven, you can cook the aubergines very successfully in a Duromatic. This method softens the skin beautifully so that it can be used along with flesh. Baba ghanoush tastes wonderful as a dip or side dish with flatbread and falafel.
Ingredients
2 aubergines Aubergines Rinse thoroughly and pierce the skin in several places with a fork.
Lemons only the juice
3 tbsp olive oil
2 tbsp Tahini paste
2 garlic cloves Crush
1/2 tsp cumin
1 tsp salt
Freshly ground black pepper to season to taste
Instructions
1. Place the trivet into the DUROMATIC® and add water until it is just covered. Place the aubergines inside.
2. Close the lid. Cook under pressure at setting 1 for 15 minutes.
3. Once the cooking time is finished, set the DUROMATIC® aside and allow to cool.
4. Allow the aubergines to cool slightly and pull them apart using two forks. Transfer to a bowl.
5. Add lemon juice, sesame paste, garlic and cumin to taste. Mash down, add oil and seasoning to taste.
6. Serve your baba ghanoush with flatbread, pita bread or vegetable sticks.
