ITALY: CALABRIA CHILLI IN THE FRYING PAN

After spiciness from Mexico and Asia, chilli from Europe is added to the pan in 2024. The chillies from southern Italy are smoky and mild. You can already find countless recipes online under "Calabrian chilli". It's best to fry the hot chillies just as hot and create a spicy pasta sauce to go with them. Did you know that this popular Indian dish actually comes from Scotland? In the 70s, Ali Ahmed Aslam created a tomato and yoghurt sauce for "too dry" chicken tikka in Glasgow.
