America's Test Kitchen editors selected the HOTPAN® for its appealing aesthetic as a serving dish and its ability to cook straight from the pot by transferring the stainless-steel bowl from the stove to the specially designed insulated pot. SOFT COOKING AT A GLANCE

How so? It's all in the stainless-steel pot and the innovative warming bowl. These enable us to "SOFT-COOK", which is a very special way of cooking. It is a very gentle cooking process that requires a little liquid, which preserves more of the food's valuable nutrients (vitamins and minerals). Additionally, the insulating bowl keeps food warm for up to two hours, making it easier to cater for guests.
1. HEAT BRIEFLY
Heat the food to be cooked until the plume of steam rises.
2. ALLOW TO SIMMER
Allow to simmer on a low heat for a little while.
3. PLACE IN THE INSULATING HOLDER & SOFT-COOK UNTIL DONE
Remove the pot from the hob and place in the insulating holder. The food cooks on its own until just right and remains warm for up to two hours.

HOTPAN® SPRING RAMEN


Ramen with Spring Vegetables
Prep time: 15 minutes / Cook time: 20 minutes
Total time: 35 minutes
Servings: 4
INGREDIENTS
½ ounce dried shiitake mushrooms
6 ounces ramen noodles
2 teaspoons kosher salt
4 ounces sugar snap peas, strings discarded
1 tablespoon vegetable oil
2 cloves garlic, minced
1 tablespoon minced ginger
4 scallions, sliced, white and green parts separated
1 tablespoon white miso
4 cups low-sodium chicken broth
Optional garnishes: thinly sliced radish, shredded carrot, pickled ginger, torn nori, chili crisp
INSTRUCTIONS
Place the dried mushrooms in a bowl and cover with 1 ½ cups room temperature water, pushing down on mushrooms to submerge. Soak for 20 minutes, then remove mushrooms, reserving the soaking liquid. Rinse mushrooms under running water, then roughly chop. Strain the soaking water through a fine sieve to remove grit; reserve both and set aside.
Prepare an ice bath by combining ice with cold water in a large bowl, then bring 6 cups of water to a boil in the HotPan. Add the noodles and cook following package directions. Use tongs to transfer noodles to a bowl, cover with a towel and keep warm. Return the pot of water to a boil and add the snap peas. Stir and cook until crisp-tender, about 1 minute. Drain and transfer peas to the ice bath to cool completely.
Wipe out the HotPan and set over medium heat. Add the oil and once hot, add the garlic, ginger and the scallion whites. Cook, stirring frequently, until fragrant, about 1 minute. Add the miso, chicken broth and ½ cup of the reserved mushroom soaking liquid and bring to a boil, whisking to dissolve the miso. Stir in the rehydrated mushrooms, and bring to a boil over high heat. Cover and move to the insulating bowl. Let sit 15 minutes, then stir in noodles.
To serve, ladle soup into bowls and garnish with snap peas, scallion greens and other optional garnishes of your choice.
