Ingredients

  • 1/2 tbsp sesame oil
  • 4 chicken breasts without skin
  • 3 cups water
  • 5 1/2 tbsp dry sherry
  • 2 tbsp soya sauce
  • 2 spring onions trim, wash and cut into fingerwide strips
  • 1 shallots peel and cut into slices
  • 2 tbsp ginger Scrape off the peel and then grate finely
  • 1 star anises
  • 1 tsp sugar
  • 1 tsp sea salt

Instructions

1. Remove chicken breasts from the refrigerator and put on one side for about 30 minutes at room temperature.

2. Allow the water to simmer lightly with sherry, soy sauce, spring onions, shallots, ginger, star anise, sugar and salt for 10 minutes.

3. Then add the sesame oil and the chicken breasts and, as soon as it starts to boil, put the lid on and allow to simmer lightly for 5 minutes.

4. Start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android

5. Then place the DUROTHERM® / HOTPAN® into the base / insulating bowl and soft cook for 5 minutes.

6. At the end of the cooking time place the chicken breasts onto a plate, cover with cling film and allow to cool down somewhat.

7. Pour the liquid through a sieve and store. This can be used at any time as a basic stock for spicy soups or rice dishes.

Serving

Slice the meat and serve with sautéed broccoli, pak choi or fried green beans. They can also be prepared as a chicken salad.
