Ingredients

  • 1 tbsp butter
  • 1/2 onion chop finely
  • 2 pounds fennel wash, trim and quarter. Chop the fennel fronds and place on one side.
  • 1/2 lemon squeeze
  • 2 pinches herb salt
  • 3 1/2 tbsp water
  • 3 tbsp chopped parsley
  • 3 1/2 ounces Grated Gruyère cheese as garnish

Instructions

1. Melt the butter in the DUROTHERM® / HOTPAN®. Sweat the onions.

2. Lay the fennel over the onions and pour water and lemon juice over them. Sprinkle with the herb salt.

3. Put on the lid and start the cooking assistant of the app. The app can be installed free of charge in the corresponding store for iOS and Android

Serving

Arrange the fennel in the pre-warmed serving bowl and keep warm in the oven.

Reduce the liquid somewhat then add the chopped parsley and fennel fronds. When arranging, pour over the fennel.

Serve the grated cheese separately.
