  • »2 1/4 pounds romanesco broccoli wash and cut into florets
  • » Sea salt and black pepper

  • »6 anchovy fillets canned water for a few minutes, drain and chop coarsely
  • »2 red chilli peppers halve lengthwise, core and cut into strips
  • »5 tbsp breadcrumbs
  • »2 tbsp butter
  • »1 ounce grated parmesan cheese

Instructions

1. Place the romanesco broccoli with 3.5 fl oz. water into the DUROTHERM® / HOTPAN®.

2. Reduce the heat and allow to simmer for 5 minutes.

3. Start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android

4. Then place the DUROTHERM® / HOTPAN® into the base / insulating bowl and soft cook for approx. 15 minutes.

5. In the meantime prepare the anchovy crumbs.

1. Heat the butter in the casserole, then add the breadcrumbs and fry gently.

2. Add the anchovy fillets and chillies and season only with pepper as the anchovies are quite salty. Reserve.

Serving

Season the vegetables with salt and pepper, arrange on a preheated dish and sprinkle with anchovy crumbs.

Sprinkle the grated Parmesan cheese over the Romanesco and serve.

6. At the end of the cooking time release steam quickly. Cool the rim of the cooker under tepid running water. Then open the lid as soon as the pressure indicator is right at the bottom.
