Ingredients

  • 2 tbsp olive oil
  • 1 onions chop finely
  • 2 garlic cloves Crush
  • 4 tbsp tomato purée
  • 2 red pepper wash, halve, remove seeds and white bits, then cut into pieces the width of a finger
  • 2 courgettes cut into pieces of 2 cm
  • 1 aubergines cut into pieces of 2 cm
  • 3 ripe tomatoes cut out the stem and remove the skin. Then cut in half, remove the seeds and cut into quarters
  • 1 truss thyme sprig pluck off leaves and chop coarsely
  • 3 1/2 tbsp vegetable stock prepare stock
  • Sea salt and black pepper Freshly ground

Instructions

1. Heat the olive oil on medium heat. Lightly fry the onions and garlic.

2. Add the tomato purée and then the vegetables. Sauté while stirring for a few minutes.

3. Deglaze with the vegetable bouillon and add the thyme leaves.

4. Cook under pressure on setting 1 for 8 minutes.

5. As soon as the desired pressure level has been reached, start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android

6. At the end of the cooking time cool the rim of the cooker under cold running water until the pressure indicator stem remains in its lowest position.

Serving

Season the vegetables to taste with salt and pepper.
