Pork-ragout with tomatoes, rosemary and sage

  • »1 3/4 pounds lean boneless shoulder of pork Get the butcher to cut it up into finger-width pieces
  • »5 1/2 tbsp milk
  • »1 tsp sea salt
  • »1/4 tsp black pepper ground In a large bowl mix together the milk, salt and pepper, then add the meat and leave to draw.

Instructions

1. Heat the olive oil, brown the pancetta.

2. Add the carrots, onions and garlic and cook together for 3 minutes. Then stir in the tomato purée and brown a little.

3. Add the meat with the milk, mix in and stir well so that the milk does not burn. Then pour in the wine as well.

4. Add the tomatoes, rosemary and sage; simmer the whole lot covered for 20 minutes, stirring from time to time so that nothing catches.

5. Start the cooking assistant. The app can be installed free of charge in the corresponding store for iOS and Android

6. Then place the DUROTHERM® / HOTPAN® into the base / insulating bowl and soft cook for 60 minutes.

Serving
