Ingredients

  • »17 3/4 ounces grated Gruyère cheese
  • »10 1/2 ounces grated Emmental
  • »2 garlic cloves peel and crush
  • »1 1/2 cups white wine
  • »3 tsp Corn starch stir with kirschwasser
  • »2 tbsp kirsch
  • » Ground white pepper
  • »1 pinch nutmeg grate
  • »1/2 tsp paprika
  • » A little white fir essence
  • »1 1/4 pounds rustic bread cut into bitesize pieces

Instructions

1. Rub fondue caquelon with crushed garlic clove.

2. Add white wine, bring to the boil and add the grated cheese whilst stirring continuously. Heating evenly, stir to give a smooth mass.

3. Then bind together with the stirred cornflour and season with pepper, nutmeg and paprika.

4. Shortly before serving, add aroma with a little (2-3 drops) silver fir essence.

Serving

Place the caquelon on the rechaud and serve the cubes of bread with it separately in the bread basket.
