  • »2 garlic cloves peel and squeeze

  • »2 tbsp tomato purée
  • »2 tbsp paprika, sweet
  • »6 1/2 tbsp full-bodied red wine
  • »1 3/4 cups beef stock
  • »2 red chilli peppers halve lengthwise, core and cut into strips
  • »8 3/4 ounces potatoes that remain firm when cooked cut fingerwide cubes
  • »10 1/2 ounces chopped tomatoes canned
  • »3 1/2 ounces sweetcorn canned rinse with cold water and drain well
  • »5 1/4 ounces red beans canned rinse with cold water and drain well
  • » Sea salt and black pepper Freshly ground

Garnish

  • »1 bunch parsley chop
  • »3 1/2 ounces cheddar cheese grate
  • »7 ounces crème fraîche

Instructions

1. Heat sunflower oil on setting 1/2. Lightly cook onions and garlic.

2. Add the beef and tomato puree and sauté well.

3. Add the paprika and roast briefly together.

5. Add the remaining ingredients and bring to the boil whilst stirring. Season with salt and pepper.

6. Place the lid on and heat until a thin plume of steam rises from between the lid and rim of the pan.

7. Reduce the heat and allow to simmer for 10 minutes.
