How long do you cook a pork roast in the pressure cooker?
Rose, Lakewood, Ca

Like most anything you cook in the pressure cooker, a pork roast will take 1/3 the time it does in the oven. So, if you normally cook pork at 350 degrees F. for 15 minutes per pound, you would cook it at 15 pounds of pressure (2nd red ring) at 5 minutes per pound. I cook a 3 lb. pork shoulder roast (yes, it has more fat, but turns out more tender and delicious than a loin roast - and is considerably less expensive!) in around 35 minutes.

My recipe for Pork with Rosemary and Apples is in our Recipe Box. Remember to add liquid to this recipe unless you are using a Kuhn Rikon pressure cooker. The unique valve of the DUROMATIC does not allow any steam to escape so you do not have to use much liquid. The roast actually sits on the bed of apples, rather than "stewing" in liquid.
