Artichokes with Lemon Pepper Oil

RECIPE SEARCH

Ingredients:

4 medium size artichokes
1/2 lemon
2 tablespoons lemon pepper oil or olive oil
1 cup water

Directions:

  1. Trim stems off artichokes, snip sharp points off leaves, and rub cut surfaces with lemon.
  2. Fit trivet into a 5-quart or larger pressure cooker and add the water.
  3. Stand artichokes in pot and drizzle oil over each.
  4. Close lid and bring pressure to second red ring over high heat. Adjust heat to stabilize pressure at second red ring.
  5. Cook 10 to 12 minutes depending on size and age of artichokes.
  6. Remove from heat and let heat subside naturally.
Server either warm or cold.
